The Chef

Chef’s Story

A native of Arlington, Texas, Chef Aaron is a graduate of the Culinary Institute of America, Hyde Park, NY. He has worked under some of the best chefs in the country, including Chef Rick Bayless in Chicago, Chef Jan Birnbaum in Seattle, and two-time James Beard Award Winner Chef Melissa Kelly in Rockland, Maine.

Upon relocating to Kauai nearly a decade ago, Chef Aaron spent time as the Executive Chef at the acclaimed Hukilau Lanai Restaurant, known for its superb seafood offerings and utilization of local ingredients.  While there, Aaron cultivated the relationships with the local farmers, ranchers and fishermen, causing a move to open 22 North in 2010, at the historic Kilohana Plantation.  22 North was the first truly farm-to-table restaurant on Kauai, sourcing nearly 80% of all ingredients from the Hawaiian islands.  As Chef de Cuisine, Aaron oversaw not only the menu planning and execution, but the planting and cultivating of several acres of gardens on the plantation grounds, for specific use in the restaurant.   Building the bridge between farmer, rancher and chef has always been paramount for creating a successful restaurant model for Chef Aaron, and the launch of Street Burger in 2015 confirmed the strength of these growing relationships.

Street Burger, and now, Oyster 369 are the culmination of Chef Aaron’s many years of culinary knowledge and expertise, as well as his keen sense for great customer service. At Street Burger, a hip neighborhood restaurant featuring fresh local ingredients, Chef Aaron thoughtfully prepares exciting new twists on an American classic. The menu boasts Hawaii raised Kiawe Reserve beef, locally grown greens and tomatoes, as well as hand cut fries, house-made condiments and desserts, along with 26 taps of the best craft beer the island of Kauai has to offer. The newly opened Oyster 369, operating adjacent to Street Burger, allows Chef Aaron a new canvas for creating delicious seafood dishes, full of flavor and exciting touches.  Able to utilize a wood-fired brick oven in his cooking, Chef Aaron offers up not only the freshest raw and chilled shellfish & seafood, but will tempt you with sizzling mussels, oven roasted clams, whole roasted fish and the like.  Having spent time in both the Northwest and the Northeast, Chef Aaron brings a fresh perspective to our tropical paradise.
